Ingredients

1 lb flank steak, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon fresh parsley, chopped (for garnish)

For the Herb Butter:

1/2 cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

Zest of 1 lemon

Salt and pepper, to taste

Instructions

Marinate the Steak:

    - In a large bowl, combine the olive oil, sea salt, black pepper, garlic powder, smoked paprika, thyme, and rosemary.

      - Add the flank steak cubes and toss until well coated. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.

        Prepare the Herb Butter:

          - In a small mixing bowl, combine the softened unsalted butter, minced garlic, parsley, chives, and lemon zest.

            - Season with a pinch of salt and a dash of black pepper. Mix until well combined and creamy.

              - Spoon the herb butter onto a piece of parchment paper, roll it into a log shape, and refrigerate until firm, about 30 minutes.

                Skewer the Steak:

                  - Preheat your grill or grill pan to medium-high heat.

                    - Thread the marinated steak cubes onto skewers (if using wooden skewers, soak in water for 30 minutes beforehand to prevent burning). Leave a small gap between each piece for even cooking.

                      Grill the Skewers:

                        - Once the grill is hot, place the skewers on it and cook for about 3-4 minutes per side, or until they reach your desired doneness (medium-rare: 130°F, medium: 140°F).

                          - Flip the skewers occasionally to ensure they cook evenly.

                            Serve:

                              - Once cooked, remove the skewers from the grill and let them rest for a few minutes.

                                - Slice the chilled herb butter into rounds and top each steak skewer with a pat of herb butter while they are still warm. Garnish with fresh parsley.

                                  Enjoy!

                                    - Serve the Tender Herb Butter Steak Skewers warm with your favorite sides, such as grilled vegetables, rice, or a fresh green salad.
