Tender Herb Butter Steak Skewers

1.5 lbs sirloin steak, cut into 1-inch cubes

1/4 cup olive oil

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 teaspoons paprika

Salt and pepper to taste

1 tablespoon balsamic vinegar

8 wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

1/2 cup unsalted butter, softened

Zest and juice of 1 lemon

Marinate the Steak: In a large bowl, combine olive oil, minced garlic, chopped rosemary, thyme, paprika, salt, pepper, and balsamic vinegar. Add the steak cubes and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for optimal flavor.

    Prepare Herb Butter: In a small bowl, mix the softened butter with lemon zest, lemon juice, a pinch of salt, and pepper until well combined. Transfer to a piece of parchment paper or plastic wrap, shape into a log, and refrigerate until firm.

      Assemble Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated steak onto the skewers, leaving a little space between each piece.
