1 block (14 oz) extra-firm tofu, pressed and drained

1/4 cup olive oil

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1/2 cup panko breadcrumbs

Fresh herbs (parsley and chives), finely chopped for garnish

Lemon wedges, for serving

Instructions
 

Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to remove excess moisture. Once pressed, slice the block into 1-inch thick steaks.

    Marinate the Tofu: In a shallow dish, whisk together the olive oil, soy sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, salt, and dried herbs. Place the tofu steaks in this marinade, ensuring they are well-coated. Let sit for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

        Coat the Tofu: In a shallow bowl, add the panko breadcrumbs. Remove each tofu steak from the marinade, allowing excess marinade to drip off, then press each side into the panko breadcrumbs to create a crust.

          Bake the Tofu: Arrange the coated tofu steaks on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy on the outside.

            Finishing Touches: Once baked, remove the tofu from the oven and let it cool slightly. Garnish with freshly chopped herbs.

              Serve: Plate the herb-crusted tofu steaks with lemon wedges on the side, allowing each person to squeeze fresh lemon juice over their steak before enjoying.
