1 lb ground turkey

1 cup brown rice (uncooked)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 bell pepper (any color), diced

1 small onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced tomatoes (can use canned)

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish

Lime wedges for serving

Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, cover, and reduce heat to low. Cook for 45 minutes, or until tender. Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork before serving.
