2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 small red onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

1 avocado, diced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Optional: ½ cup shredded cheese (cheddar or pepper jack)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the diced sweet potatoes. Cook for about 10-12 minutes, stirring occasionally, until they are fork-tender and just starting to caramelize.

    Sauté Aromatics: Add the chopped red onion to the skillet and cook for another 3-4 minutes until the onion becomes translucent. Then, stir in the minced garlic and red bell pepper, cooking for an additional 2-3 minutes until the bell pepper starts to soften.

      Incorporate Beans and Corn: Add the black beans, corn, cumin, smoked paprika, chili powder, salt, and pepper to the skillet. Stir everything well to combine, and cook for about 5 more minutes until everything is heated through.

        Melt Cheese (Optional): If you’re using cheese, sprinkle it over the mixture and cover the skillet with a lid. Let it sit for a couple of minutes until the cheese is melted.

          Serve and Garnish: Remove from heat and stir in the diced avocado. Garnish with chopped cilantro. Serve hot with lime wedges on the side for squeezing over the top.
