2 cups cooked jasmine rice (preferably day-old)

1 cup fresh crab meat (lump or claw meat)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, finely diced

1 red bell pepper, diced

2 green onions, sliced (white and green parts separated)

1 small carrot, diced

2 eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon oyster sauce

1 teaspoon sugar

1 tablespoon lime juice

Fresh cilantro leaves for garnish

Sliced cucumber and lime wedges for serving

Chili flakes or Sriracha (optional for heat)

Prepare the Rice: If you haven't done so already, cook the jasmine rice and allow it to cool completely. Day-old rice works best as it reduces stickiness.

    Heat the Oil: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and diced onion to the pan. Stir-fry for about 1-2 minutes until the onion is translucent and the garlic is fragrant.

        Add Vegetables: Toss in the diced red bell pepper and carrot. Continue to stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

          Cook the Eggs: Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble them until fully cooked, then mix them with the vegetables.

            Combine Rice and Crab: Add the cooked jasmine rice and fresh crab meat to the wok. Use a spatula to break apart any clumps of rice and combine everything evenly.

              Season the Rice: In a small bowl, mix together soy sauce, fish sauce, oyster sauce, sugar, and lime juice. Pour this sauce mixture over the rice and stir well to ensure every grain is coated.
