Ingredients

1 medium head green cabbage, core removed and thinly sliced (about 2-3 cups)

2 large yellow onions, thinly sliced

3 tablespoons unsalted butter

2 tablespoons olive oil

2 tablespoons brown sugar

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon apple cider vinegar

Fresh herbs for garnish (such as parsley or thyme)

Instructions

Prepare the Veggies: Start by removing the core from the cabbage and slicing it thinly. Do the same with the onions. Aim for uniform slices to ensure even cooking.

Heat the Pan: In a large, heavy skillet or cast-iron pan, heat the butter and olive oil over medium heat until the butter has completely melted.

Sauté Onions: Add the sliced onions to the skillet. Sprinkle with a pinch of salt and sauté for about 10-15 minutes, stirring occasionally until they start to turn golden and soft.

Add Cabbage: Once the onions are caramelized, add the sliced cabbage to the skillet. Stir well to combine with the onions.

Sweeten the Mixture: Sprinkle the brown sugar over the cabbage and onions. This will enhance the caramelization. Stir to ensure it is evenly distributed.

Season: Add the remaining salt and pepper. Mix well, then reduce the heat to low.

Caramelize: Cook the mixture, stirring occasionally, for an additional 20-30 minutes. Make sure to turn the cabbage and onions gently to allow even cooking while encouraging caramelization. If it begins to stick, a splash of water or more olive oil can be added to deglaze the pan.

Finish with Vinegar: Once the cabbage is tender and nicely caramelized, stir in the apple cider vinegar. This will add a lovely tang that balances the sweetness.

Garnish and Serve: Remove from heat, taste, and adjust seasoning if needed. Garnish with freshly chopped herbs for a pop of color and flavor. Serve warm as a side dish or over grains for a hearty meal.
