Ingredients

1 lb sirloin or ribeye steak, cut into 1-inch cubes

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

½ teaspoon red pepper flakes (optional, for some heat)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Steak: Season the cubed steak generously with salt and pepper on all sides. Let it sit at room temperature for about 15 minutes to allow the flavors to penetrate and to ensure even cooking.

Heat the Pan: In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until shimmering but not smoking.

Sear the Steak: Working in batches to avoid overcrowding, add the steak cubes to the hot skillet. Sear for about 2-3 minutes without moving them, allowing a delicious crust to form. Flip and cook for an additional 2 minutes, or until desired doneness is achieved (medium-rare is about 130°F).

Add Garlic and Herbs: Reduce the heat to medium-low, push the steak bites to the side of the pan, and add the butter, minced garlic, rosemary, thyme, and red pepper flakes to the skillet. Stir the mixture until the butter melts and the garlic becomes fragrant.

Coat the Steak: Toss the steak bites in the garlic butter mixture, making sure they are evenly coated. Cook for another 1-2 minutes, ensuring the garlic doesn’t burn.

Serve: Remove the skillet from heat, sprinkle with fresh parsley for color, and serve hot. These steak bites are excellent on their own or paired with crusty bread for dipping or served over rice or pasta.
