Tini’s “Surprise-Ingredient” Mac & Cheese

2 cups elbow macaroni

4 cups water

1 teaspoon salt

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon sriracha (or to taste)

1 cup cooked and crumbled bacon (optional)

½ cup frozen peas (or spinach for a surprise veggie boost)

Salt and pepper to taste

¼ cup bread crumbs (for topping)

1 tablespoon olive oil (for drizzling)

Instructions
 

Cook the Pasta: In a large pot, bring 4 cups of water to a rolling boil. Add 1 teaspoon of salt and the elbow macaroni. Cook according to package directions until al dente, usually around 8-10 minutes. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt 2 tablespoons of unsalted butter over medium heat. Whisk in 2 tablespoons of flour, stirring continuously for about 2 minutes until it forms a roux.

      Add Milk: Gradually whisk in 2 cups of whole milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5 minutes. It should coat the back of a spoon.

        Cheese it Up: Add the shredded sharp cheddar and grated Parmesan cheese to the sauce. Stir until the cheese has melted completely.

          Mix in the Surprises: Stir in 2 tablespoons of Dijon mustard, 1 tablespoon of Worcestershire sauce, and sriracha. For a fun twist, add in the cooked bacon and frozen peas (or spinach) at this point. Mix well and adjust seasoning with salt and pepper to taste.

            Combine Sauce and Pasta: Add the drained macaroni to the cheese sauce, stirring until well coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac & cheese mixture into a greased 9x13 inch baking dish.

                Topping: In a small bowl, combine ¼ cup of bread crumbs with 1 tablespoon of olive oil. Mix until the breadcrumbs are evenly coated, and sprinkle this mixture evenly over the top of the mac & cheese for a crunchy finish.

                  Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and sizzling.
