Ingredients

2 cups rolled oats

1 cup sliced almonds

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup dried fruit (e.g., cranberries, apricots, or raisins)

1/4 cup chia seeds (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large bowl, combine rolled oats, sliced almonds, shredded coconut, ground cinnamon, salt, and chia seeds (if using). Stir well to mix.

Combine Wet Ingredients: In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir until all the dry ingredients are evenly coated in the wet mixture.

Spread on Baking Sheet: Transfer the granola mixture to the prepared baking sheet. Spread it out evenly, pressing it down gently with the back of a spatula to create a compact layer.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the granola is golden brown, stirring halfway through to ensure even baking. Keep an eye on it, as it can go from golden to burnt quickly.

Add Dried Fruit: Once baked, remove the granola from the oven and let it cool for about 10 minutes. While the granola is still warm, add the dried fruit and mix gently.

Cool Completely: Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.

Store: Once cooled, break the granola into clusters and transfer it to an airtight container. Store at room temperature for up to two weeks.

Enjoy your Toasty Almond Coconut Granola as a breakfast cereal, yogurt topping, or a snack on-the-go!
