3 cups rolled oats

1 cup sliced almonds

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup dried fruit (e.g. cranberries or apricots)

1/2 cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, shredded coconut, ground cinnamon, and salt. Stir until the ingredients are well mixed.

      Combine Wet Ingredients: In a separate small bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth and combined.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir well to ensure all the oats and almonds are coated evenly.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet and spread it out evenly in a single layer.

            Bake: Place the baking sheet in the preheated oven. Bake for 25-30 minutes, stirring halfway through to ensure even browning. Bake until golden brown and fragrant.
