1 block firm tofu, drained and pressed

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn tortillas

1 cup red cherries, pitted and halved

1 cup red cabbage, thinly sliced

1/4 cup cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

1 avocado, sliced

Lime wedges, for serving

Prep the Tofu: Start by draining and pressing the tofu to remove excess moisture. Once pressed, cut it into small cubes.

    Season the Tofu: In a large bowl, toss the tofu cubes with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.

      Cook the Tofu: Heat a non-stick skillet over medium-high heat. Add the seasoned tofu cubes and cook for about 8-10 minutes, stirring occasionally, until they are golden brown and crispy on all sides. Remove from heat and set aside.

        Make the Cherry Slaw: In a separate bowl, combine the red cherries, red cabbage, cilantro, apple cider vinegar, and honey/agave syrup. Toss well to mix and let it sit for about 10 minutes to allow the flavors to meld.

          Warm the Tortillas: In a dry skillet or directly on the stovetop flame, lightly warm the corn tortillas for about 30 seconds on each side or until pliable.
