Turkey Chili and Cheese Mini Sliders

1 pound ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (red and green), finely diced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup shredded cheddar cheese

12 mini slider buns

Sour cream and chopped green onions for garnish

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook until browned and fully cooked through, breaking it apart with a spatula as it cooks (about 6-8 minutes). Drain any excess fat if necessary.

    Sauté Vegetables: Add the chopped onion, minced garlic, and bell peppers to the skillet with the turkey. Sauté for about 5 minutes until the vegetables are softened.

      Add the Seasonings: Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well and cook for an additional minute to let the spices bloom.

        Incorporate Beans and Tomatoes: Add the black beans and diced tomatoes (with their juices) to the mixture. Stir well and bring to a simmer. Lower the heat and let it simmer for about 10-15 minutes, stirring occasionally, until the chili thickens slightly.

          Cheese Melting: Stir in half of the shredded cheddar cheese until melted and combined with the turkey chili mixture.

            Prepare Slider Buns: While the chili simmers, preheat your oven to 350°F (175°C). Place the mini slider buns on a baking sheet. Lightly toast in the oven for 5 minutes until warmed and slightly crispy.

              Assemble Sliders: Remove the toasted buns from the oven. Place a generous spoonful of the turkey chili mixture on the bottom half of each slider bun. Sprinkle the remaining cheddar cheese over the chili.

                Bake the Sliders: Place the baking sheet back in the oven for about 5 minutes, or until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove from the oven and garnish with sour cream and chopped green onions. Top each mini slider with the other half of the bun. Serve warm and enjoy!
