For the Sloppy Joe Filling:

1 lb ground beef (or plant-based substitute)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup ketchup

2 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp mustard

1 tsp smoked paprika

Salt and pepper to taste

For the Grilled Cheese:

8 slices of bread (your choice: sourdough, white, or brioche)

4 cups shredded cheese (cheddar, mozzarella, or a blend)

4 tbsp butter, softened

Optional: sliced jalapeños or pickles for garnish

Prepare the Sloppy Joe Filling:

    - In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.

      - Add the chopped onion and minced garlic to the skillet, sautéing until the onion is soft and fragrant, about 3-4 minutes.

        - Stir in the ketchup, Worcestershire sauce, brown sugar, mustard, and smoked paprika. Mix until well combined and simmer for about 10-15 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Assemble the Grilled Cheese:

            - Preheat a large skillet or griddle over medium heat.

              - Butter one side of each slice of bread. On the unbuttered side, layer a generous amount of shredded cheese (about 1/2 cup each) and the prepared Sloppy Joe filling. Top with another slice of bread, butter side up.

                Grill the Sandwiches:

                  - Carefully place the sandwiches on the skillet or griddle. Cook until golden brown, about 3-4 minutes. Flip and cook the other side until golden and the cheese is melted, another 3-4 minutes.

                    Serve:

                      - Once the grilled cheese is crispy and cheese is nicely melted, remove from the skillet. Allow to cool for a minute, then slice in half and serve hot. Garnish with jalapeños or pickles if desired.
