2 medium carrots, diced

2 stalks celery, diced

1 zucchini, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes (with juices)

1 can (4 oz) diced green chilies (optional for extra heat)

4 cups vegetable broth

2 tablespoons taco seasoning (store-bought or homemade)

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Avocado slices, for topping

Tortilla chips, for serving (optional)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).

    Add Remaining Veggies: Stir in the bell pepper, carrots, celery, and zucchini. Cook for another 5-7 minutes, until the vegetables start to soften.
