For the Vegetable Curry:

1 medium onion, finely chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1 teaspoon turmeric powder

1 tablespoon curry powder

1 can (14 oz) coconut milk

1 cup vegetable broth

1 cup chickpeas, drained and rinsed

1 medium carrot, diced

1 red bell pepper, chopped

1 cup green beans, trimmed and cut into bite-sized pieces

1 zucchini, diced

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro for garnish

For the Fragrant Rice:

1 cup basmati rice

2 cups water

1 teaspoon cumin seeds

1 cinnamon stick

2 cardamom pods

2 cloves

Salt to taste

Instructions
 

Prepare the Fragrant Rice:

    - Rinse the basmati rice under cold water until the water runs clear to remove excess starch. This helps achieve fluffy rice.

      - In a medium saucepan, bring 2 cups of water to a boil and add the cumin seeds, cinnamon stick, cardamom pods, and cloves. Add the rinsed rice and a pinch of salt. Stir, cover, and reduce the heat to low. Let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

        Make the Vegetable Curry:

          - In a large pan, heat the olive oil over medium heat. Add cumin seeds and mustard seeds, allowing them to sizzle and release their aroma for about 30 seconds.

            - Add the chopped onion, garlic, and ginger to the pan. Sauté until the onions are translucent, about 5 minutes.

              - Stir in turmeric powder and curry powder, cooking for another minute to enhance the flavors.

                - Pour in the coconut milk and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer.

                  - Add the diced carrot, chopped bell pepper, green beans, zucchini, and chickpeas. Season with salt and pepper. Cover the pan and let it simmer for 15–20 minutes, stirring occasionally until the vegetables are tender.

                    - Adjust seasoning if needed, and simmer uncovered for an additional 5 minutes for the sauce to thicken slightly.

                      Serve:

                        - Spoon the fragrant rice onto plates and ladle the vegetable curry over it.

                          - Garnish with freshly chopped cilantro for an aromatic touch.
