Vegetable Quinoa Bowl with Lemon Dressing

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (mix of colors), diced

1 cup cooked chickpeas (canned or boiled)

1 cup baby spinach

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

1 avocado, sliced (optional)

For the Lemon Dressing:

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Once cooked, fluff the quinoa with a fork and set it aside to cool.

    Prepare the Vegetables: While the quinoa is cooling, chop and prepare all the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell peppers, cooked chickpeas, baby spinach, red onion, and parsley.

      Make the Lemon Dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, honey (if using), salt, and pepper until well combined. Adjust the seasoning to taste.

        Combine Ingredients: Once the quinoa has cooled, add it to the bowl of vegetables. Pour the lemon dressing over the mixture and gently toss everything together until evenly coated.
