Warm Apple Oat Breakfast Muffins

1 ½ cups rolled oats

1 cup unsweetened applesauce

½ cup almond milk (or any milk of your choice)

½ cup brown sugar (packed)

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

1 large apple, peeled and diced (preferably Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

¼ cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Wet Ingredients: In a large mixing bowl, combine the rolled oats, applesauce, almond milk, brown sugar, egg, and vanilla extract. Whisk together until fully blended and smooth.

      Mix the Dry Ingredients: In another bowl, whisk together the baking powder, baking soda, cinnamon, nutmeg, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just incorporated. Be careful not to overmix.

          Fold in Apples and Nuts: Gently fold in the diced apple, walnuts or pecans (if using), and raisins or dried cranberries (if using) until evenly distributed throughout the batter.

            Fill Muffin Cups: Spoon the batter into the prepared muffin tins, filling each cup about ¾ full. This should yield about 12 muffins.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

                Cool and Enjoy: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
