2 cups rolled oats

1 cup raw pumpkin seeds (pepitas)

1/2 cup walnuts, chopped

1/2 cup almond butter

1/2 cup pure maple syrup

1 cup canned pumpkin puree

1 tsp vanilla extract

1 tbsp pumpkin pie spice

1/2 tsp salt

1/2 cup dried cranberries (or your favorite dried fruit)

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix the Dry Ingredients: In a large mixing bowl, combine the oats, pumpkin seeds, walnuts, pumpkin pie spice, and salt. Stir until evenly mixed.

      Blend the Wet Ingredients: In a separate bowl, whisk together the almond butter, maple syrup, pumpkin puree, and vanilla extract until smooth and well-combined.

        Combine and Mix: Pour the wet mixture over the dry ingredients and stir until everything is thoroughly coated. You may need to use your hands for this step to ensure even distribution.

          Fold in Add-Ins: Gently fold in the dried cranberries and dark chocolate chips (if using) until evenly dispersed throughout the mixture.

            Transfer to Baking Pan: Spoon the granola mixture into the prepared baking pan. Press down firmly with a spatula or your hands to create an even surface. Make sure to pack it tightly for better structure after baking.

              Bake the Bars: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown.
