Ingredients

4 cups seedless watermelon, diced into 1-inch cubes

2 medium cucumbers, peeled and diced

1 cup crumbled feta cheese

¼ cup red onion, finely chopped

¼ cup fresh mint leaves, chopped

¼ cup olive oil

2 tbsp balsamic vinegar

1 tbsp honey

Salt and pepper to taste

Optional: 1 tbsp lemon juice for extra zest

Instructions

Prepare the Ingredients: In a large mixing bowl, combine the diced watermelon, cucumbers, crumbled feta cheese, and finely chopped red onion. Gently toss the ingredients together, being careful not to mash the watermelon.

Make the Dressing: In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, and lemon juice if using. Season with salt and pepper to taste.

Combine the Salad: Pour the dressing over the watermelon and cucumber mixture. Add the fresh mint leaves and toss everything together until well coated with the dressing.

Chill and Serve: For the best flavor, allow the salad to sit in the refrigerator for 15-30 minutes before serving. This will help the flavors to meld. Serve chilled in bowls or on a platter, garnished with additional mint if desired.
