2 large boneless, skinless chicken breasts, thinly sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

4 large flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream, guacamole, or salsa (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the sliced chicken, olive oil, minced garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper. Mix well to coat the chicken evenly. Marinate for at least 15 minutes while you prepare the vegetables.

    Cook the Vegetables: Heat a large skillet over medium-high heat. Add a splash of olive oil, then add the sliced onions and peppers. Sauté for 5-7 minutes until they are tender and slightly caramelized. Season with a pinch of salt and pepper. Once cooked, transfer the veggies to a plate and set aside.

      Cook the Chicken: In the same skillet, add a little more olive oil if necessary, and then add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Check for doneness by cutting a piece; it should be white throughout.
