Ingredients
  

1 cup cooked quinoa

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 bell pepper (any color), diced

1 avocado, diced

1/4 red onion, finely chopped

1 cup fresh spinach

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Juice of 1 orange

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Prepare the Quinoa: If not already cooked, rinse the quinoa under cold water. In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the water has been absorbed. Once done, remove from heat and allow to cool.

    Chop the Vegetables: While the quinoa is cooking, chop the cucumber, cherry tomatoes, bell pepper, avocado, red onion, and parsley. Set aside.

      Mix the Dressing: In a small bowl, whisk together the lemon juice, orange juice, olive oil, cumin, salt, and pepper. Adjust seasoning as needed.

        Combine Ingredients: In a large mixing bowl, combine the cooled quinoa, chopped vegetables, spinach, and parsley.

          Dress the Salad: Drizzle the dressing over the quinoa and vegetable mix and toss gently until everything is well coated.
