Ingredients
  

1 lb (450g) ground beef (or a mix of beef and pork for extra flavor)

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium carrot, finely diced

1 celery stalk, finely diced

1 cup (240ml) whole milk

1 cup (240ml) dry white wine (such as Sauvignon Blanc)

1 cup (240ml) chicken or vegetable broth

1/2 cup (120ml) heavy cream

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Fresh basil or parsley, for garnish

Grated Parmesan cheese, for serving

1 lb (450g) pasta of your choice (fettuccine, pappardelle, or tagliatelle work great)

Instructions
 

Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes or until the vegetables are soft and the onion is translucent.

    Add Garlic and Meat: Stir in the minced garlic and cook for an additional minute. Then, add the ground beef (or meat mix) to the pan. Cook until it’s browned, breaking it up with a wooden spoon as it cooks, about 6-8 minutes. Drain any excess fat if necessary.

      Deglaze with Wine: Pour in the white wine, scraping up any brown bits on the bottom of the pan. Let it simmer until most of the wine has evaporated, about 5-7 minutes.

        Incorporate Milk and Broth: Reduce the heat to low and stir in the milk, dried thyme, salt, and pepper. Allow this mixture to simmer for about 10 minutes, stirring occasionally.

          Add Cream and Simmer: Pour in the heavy cream and chicken or vegetable broth. Bring to a gentle simmer and let it cook for another 20-30 minutes. Keep the heat low to ensure a creamy consistency. Stir occasionally and adjust seasoning with more salt and pepper as needed.

            Cook the Pasta: While the sauce is simmering, bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Drain the pasta, reserving a cup of pasta water.

              Combine: Toss the drained pasta in the sauce, adding a bit of the reserved pasta water as needed to achieve your desired consistency. Mix well to ensure all pasta is coated with the creamy sauce.
