Zesty BBQ Cauliflower Cheddar Wraps

1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon chili powder

Salt and pepper to taste

1 cup your favorite BBQ sauce

1 cup shredded sharp cheddar cheese

4 large whole wheat or spinach wraps

1 cup shredded lettuce

½ cup diced tomatoes

¼ cup sliced green onions

Optional: slice of avocado for garnish

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper until evenly coated.

      Roast the cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the cauliflower is tender and begins to brown, stirring halfway through.

        Add BBQ sauce: In the last 5 minutes of roasting, drizzle the BBQ sauce over the cauliflower and mix to coat evenly. Return to the oven to allow the sauce to caramelize slightly.

          Melt the cheese: Once the cauliflower is done, remove it from the oven and sprinkle the shredded cheddar cheese over the top. Put it back in the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

            Assemble the wraps: Lay out the wraps on a flat surface. Spoon some of the BBQ cauliflower mixture onto the center of each wrap. Top with shredded lettuce, diced tomatoes, and sliced green onions.

              Wrap it up: Fold in the sides of the wrap and then roll it from the bottom up to secure all the filling inside.

                Serve: Slice each wrap in half at a diagonal and serve warm with a side of extra BBQ sauce for dipping. Garnish with avocado slices if desired.
