1 cucumber, shredded and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1/2 lemon

Salt and pepper to taste

For the Bowls:

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/2 cup kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

Fresh parsley, for garnish

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Add chicken thighs, ensuring they're well coated. Let the chicken marinate for at least 30 minutes (or up to 2 hours for stronger flavor) in the refrigerator.

    Prepare the Tzatziki Sauce: In a medium bowl, mix Greek yogurt, shredded cucumber, minced garlic, dill, lemon juice, salt, and pepper. Taste and adjust seasoning if necessary. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
