1 cup long-grain white rice

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 teaspoon garlic, minced

Zest of 1 lime

Juice of 1 lime

1/4 cup fresh cilantro, chopped

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon cumin (optional)

1/4 teaspoon red pepper flakes (optional for heat)

Instructions
 

Rinse the Rice: Place the rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and helps to make the rice fluffy.

    Sauté Garlic: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

      Cook the Rice: Add the rinsed rice to the saucepan and stir to coat it in the oil and garlic. Toast the rice for about 2 minutes, stirring frequently.

        Add Liquid: Pour in the vegetable broth (or water), along with the lime zest, lime juice, salt, black pepper, cumin, and red pepper flakes (if using). Stir to combine.

          Bring to a Boil: Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for 18-20 minutes or until all the liquid is absorbed.

            Fluff and Season: Once done, remove the saucepan from heat and let it sit covered for an additional 5 minutes. Then, fluff the rice with a fork and gently fold in the chopped cilantro.
