Zesty Lime Shrimp and Avocado Salad

1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup fresh cilantro, chopped

2 limes (juiced and zested)

2 tablespoons olive oil

1 teaspoon honey

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

4 cups mixed greens (arugula, spinach, or your choice)

Prep the Shrimp: In a medium bowl, combine the shrimp with lime juice, lime zest, olive oil, honey, garlic powder, cumin, salt, and pepper. Toss well to ensure the shrimp is evenly coated. Let it marinate for 15-20 minutes.

    Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside to cool slightly.

      Prepare the Salad: In a large mixing bowl, combine the diced avocados, cherry tomatoes, red onion, and chopped cilantro. Gently toss to mix.

        Assemble the Salad: Place the mixed greens on serving plates or in a large bowl. Top with the avocado and tomato mixture, then add the cooked shrimp on top.
