3 medium zucchinis, thinly sliced lengthwise

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg, lightly beaten

2 cloves garlic, minced

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Place the slices on a baking sheet lined with paper towels. Sprinkle with a little salt and let them sit for about 15 minutes to draw out excess moisture.

      Make the Filling: In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, beaten egg, minced garlic, chopped basil, salt, and black pepper. Mix until well combined and creamy.

        Cook the Zucchini: Gently pat the zucchini slices dry with another paper towel to remove excess moisture. Lightly drizzle a skillet with olive oil and heat it over medium heat. Briefly sauté the zucchini slices on both sides for about 1-2 minutes until they are just tender but still maintain their shape. Remove from heat and let them cool.

          Assemble the Roll-Ups: Spread a thin layer of marinara sauce in the bottom of a baking dish (about 1 cup). Take a zucchini slice, place about 1 tablespoon of the ricotta filling at one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat this process until all zucchini slices are filled and rolled.

            Top with Sauce and Cheese: Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top, ensuring that all the rolls are covered. Sprinkle the remaining shredded mozzarella and Parmesan cheese over the sauce.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
