1 medium zucchini, grated

1 can (15 oz) black beans, rinsed and drained

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese (optional)

1 small carrot, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg (or flax egg for vegan option)

2 tablespoons olive oil (for frying)

Burger buns (for serving)

Lettuce, tomato, and any preferred toppings (for serving)

Instructions
 

Prepare Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This will help the burgers hold together better.

    Mix Ingredients: In a large mixing bowl, combine the drained black beans and mash them with a fork or potato masher until mostly smooth with some small chunks for texture. Add the squeezed zucchini, grated carrot, onion, garlic, breadcrumbs, Parmesan (if using), cumin, smoked paprika, salt, and black pepper. Mix until well combined.

      Bind the Mixture: Add the egg (or flax egg) to the mixture and stir to incorporate. The mixture should be wet but hold together. If it feels too dry, add a splash of water; if too wet, add a few more breadcrumbs.

        Form Patties: Using your hands, shape the mixture into evenly sized patties, about 3-4 inches in diameter. You should get approximately 4-6 patties depending on your desired size.

          Cook the Patties: Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Once hot, add the patties, making sure not to overcrowd the pan. Cook for 4-5 minutes on each side, or until golden brown and crispy.

            Assemble Burgers: Toast your burger buns if desired. Place a patty on each bun and top with lettuce, tomato, or any other preferred toppings. Add your favorite sauces like pesto, mayo, or avocado for extra flavor.
