Zucchini Bolognese with Pasta

2 medium zucchinis, finely chopped

1 medium onion, chopped

2 cloves garlic, minced

1 medium carrot, finely diced

1 bell pepper (any color), diced

1 can (14 oz) crushed tomatoes

1 cup vegetable broth

1 tablespoon tomato paste

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

400g pasta (spaghetti or your choice)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to the package instructions until al dente. Once cooked, drain and set aside.

    Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onions and sauté for 3-4 minutes until they become translucent.

      Add Garlic and Other Veggies: Stir in the minced garlic, diced carrots, and bell pepper. Cook for another 5 minutes until the vegetables are soft.

        Incorporate Zucchini: Add the finely chopped zucchini to the skillet. Sauté for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and begins to release some moisture.

          Create the Sauce: Mix in the crushed tomatoes, vegetable broth, and tomato paste. Add the dried oregano and basil, then season with salt and pepper to taste.

            Simmer: Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, allowing the flavors to meld together, stirring occasionally.

              Combine with Pasta: Once the sauce is thickened, add the cooked pasta directly into the sauce. Toss to combine everything thoroughly, ensuring the pasta is well-coated with the sauce.
