2 medium zucchinis, grated

1 cup canned chickpeas (drained and rinsed)

1/2 cup breadcrumbs (preferably whole grain)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for frying or baking)

Optional: your favorite dipping sauce (like tzatziki or spicy aioli)

Preheat Oven: If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture to prevent the nuggets from becoming soggy.

      Mash Chickpeas: In a mixing bowl, add the drained chickpeas. Using a fork or a potato masher, mash them until almost smooth with some chunky bits for texture.

        Combine Ingredients: Add the grated zucchini, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are thoroughly incorporated.

          Form Nuggets: With your hands, take small amounts of the mixture (about 2 tablespoons each) and shape them into nugget shapes. Place them on the prepared baking sheet.

            Cooking Method:

              - Baking: Brush the tops of the nuggets with olive oil and bake for about 20-25 minutes, flipping halfway through, until golden brown and crispy.

                - Frying: Heat a skillet over medium heat with a bit of olive oil. Fry the nuggets for about 3-4 minutes on each side until golden brown.
