2 medium zucchinis

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon sea salt (to taste)

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese (optional)

Fresh herbs (like rosemary or thyme) for garnish (optional)

Instructions
 

Preheat your oven to 225°F (110°C). Line two baking sheets with parchment paper for easy cleanup.

    Wash and dry the zucchinis. Using a sharp knife or mandoline slicer, slice the zucchinis thinly (about 1/8 inch thick). Aim for even slices to ensure uniform cooking.

      In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Mix well until all the spices are incorporated into the oil.

        Add the zucchini slices to the bowl and toss until they are evenly coated with the oil and spice mixture. If you're using Parmesan cheese, sprinkle it in at this stage and toss again.

          Arrange the zucchini slices in a single layer on the prepared baking sheets, ensuring they do not overlap. This will help them crisp up nicely.

            Bake in the preheated oven for about 2 hours or until the chips are golden and crispy. Flip the slices halfway through to ensure even baking.

              Once they are done, remove the chips from the oven and allow them to cool on the baking sheets for a few minutes. The chips will continue to crisp up as they cool.
