Zucchini Corn and Feta Fritter Sliders

2 medium zucchinis, grated

1 cup corn kernels (fresh or frozen)

1 cup crumbled feta cheese

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs

1/4 cup fresh parsley, chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Olive oil for frying

Mini slider buns

Optional: avocado slices, arugula, or your favorite sauce for topping

Instructions
 

Prepare the Zucchini: In a clean kitchen towel, wrap the grated zucchini and squeeze out excess moisture. This will prevent the fritters from becoming soggy.

    Mix the Ingredients: In a large bowl, combine the grated zucchini, corn, crumbled feta, flour, eggs, parsley, garlic powder, onion powder, paprika, and season with salt and pepper. Stir until well combined.

      Form the Fritters: Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once hot, scoop about 2 tablespoons of the fritter mixture per slider and flatten slightly with the back of a spatula. Cook in batches, making sure not to overcrowd the pan.

        Fry the Fritters: Cook fritters for about 4-5 minutes on one side until golden brown, then carefully flip and cook for another 4-5 minutes on the other side. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.

          Assemble the Sliders: Slice the mini buns in half. Place a fritter on the bottom half of each bun, and top with avocado slices, arugula, or any sauce of your choice. Finally, add the top half of the bun.
