2 medium zucchinis, grated

2 cups cooked jasmine rice (day-old works best)

1 cup mixed bell peppers, diced (red, yellow, and green)

1 cup peas (fresh or frozen)

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce (low-sodium preferred)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon ginger, grated

Salt and pepper, to taste

Optional: 1 egg (for a non-vegan option)

Optional: Sesame seeds for garnish

Prep the Ingredients: Grate the zucchinis using a box grater or food processor and squeeze out excess moisture using a clean towel or paper towels. This helps to prevent soggy fried rice.

    Cook the Eggs (Optional): If using, heat a non-stick skillet over medium heat. Add a little olive oil, crack in the egg, and scramble until just set. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining olive oil and sesame oil. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

        Add Zucchini and Peppers: Toss in the grated zucchini and diced bell peppers. Sauté for about 3-4 minutes, stirring frequently, until the zucchini is slightly tender but not mushy.
