2 cups cooked jasmine or basmati rice (preferably day-old for better texture)

1 medium zucchini, grated (about 1 cup)

1/2 cup grated carrot

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1/4 cup Parmesan cheese, grated (optional for a cheesy flavor)

1/4 cup all-purpose flour (or more as needed)

1 large egg, beaten

1 teaspoon soy sauce

1 teaspoon sesame oil

Salt and pepper to taste

1 cup breadcrumbs (for coating)

Oil for frying (vegetable or canola oil)

Instructions
 

Prepare the Vegetables: Begin by pressing the grated zucchini in a clean kitchen towel to remove excess moisture. The drier the zucchini, the better the rice balls will hold together.

    Mix the Base: In a large mixing bowl, combine the cooked rice, grated zucchini, grated carrot, chopped green onions, minced garlic, and Parmesan cheese (if using). Mix well until all ingredients are evenly distributed.

      Add Bindings: In a separate small bowl, whisk together the beaten egg, soy sauce, sesame oil, salt, and pepper. Pour this mixture over the rice and vegetable mixture. Gently fold the ingredients together, ensuring everything is well-coated.

        Shape the Balls: Begin forming the mixture into small balls, about the size of a golf ball. If the mixture feels too wet, gradually add flour until the mixture holds together well.

          Bread the Balls: Roll each ball in breadcrumbs until thoroughly coated. This will create a crispy outer layer when fried.

            Fry the Balls: Heat oil in a deep skillet or frying pan over medium heat. Once hot (about 350°F or 175°C), carefully add the rice balls to the oil, in batches to avoid overcrowding. Fry until they are golden brown, about 4-5 minutes, turning occasionally for even cooking.

              Drain and Serve: Once golden, remove the fried rice balls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with dipping sauces like sweet chili sauce or soy sauce.
