Zucchini Fritters with Garlic Aioli

For the Zucchini Fritters:

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 large egg, beaten

2 green onions, finely chopped

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1/2 teaspoon dried oregano

Olive oil, for frying

For the Garlic Aioli:

1/2 cup mayonnaise

1-2 cloves garlic, minced (adjust based on garlic preference)

1 tablespoon lemon juice

Salt and pepper, to taste

1 teaspoon Dijon mustard (optional)

Instructions
 

Prepare the Zucchini:

    - Grate the zucchinis using a box grater or food processor.

      - Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture. This helps to avoid soggy fritters.

        - Transfer the squeezed zucchini to a large mixing bowl.

          Make the Fritter Batter:

            - To the bowl with zucchini, add salt and let it sit for about 10 minutes. After 10 minutes, mix the zucchini well and then combine it with flour, Parmesan cheese, beaten egg, green onions, minced garlic, black pepper, smoked paprika, and dried oregano.

              - Mix until all ingredients are thoroughly combined. The mixture should hold together when formed into patties.

                Cook the Fritters:

                  - Heat a large skillet over medium heat and add enough olive oil to cover the bottom (about 2-3 tablespoons).

                    - Once the oil is hot, take heaping tablespoons of the zucchini mixture and form small patties using your hands or a spatula.

                      - Fry the fritters for about 3-4 minutes on each side, or until they are golden brown. You may need to cook them in batches to avoid overcrowding the pan. Add more oil as needed.

                        Prepare the Garlic Aioli:
