Ingredients

8 ounces elbow macaroni

2 medium zucchinis, grated

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup cream cheese, softened

1 cup milk

½ teaspoon paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

½ cup breadcrumbs (optional for topping)

Fresh parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Sauté the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and grated zucchini, cooking for an additional 5-6 minutes until the zucchini is tender and moisture has evaporated. Season with salt and pepper.

Prepare the Cheese Sauce: In a medium saucepan, combine the cream cheese and milk over low heat, stirring until the cream cheese has melted. Gradually add the sharp cheddar and mozzarella cheese, stirring until fully melted and smooth. Add paprika, salt, and pepper to taste.

Combine Everything: In the skillet with the sautéed zucchini, add the cooked macaroni and pour the cheese sauce over the top. Stir gently until all ingredients are well combined and the pasta is coated in cheesy goodness.

Optional Breadcrumb Topping: If you like a crunchy topping, preheat your oven to 375°F (190°C). Transfer the mac and cheese into a greased baking dish, sprinkle breadcrumbs evenly over the top, and bake for 15-20 minutes or until the top is golden brown and crisp.

Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley if desired. Serve warm and enjoy your creamy, delicious Zucchini Mac and Cheese!
