1 medium zucchini, grated and excess moisture squeezed out

1 pound ground turkey or chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

Olive oil spray or 2 tablespoons olive oil for grilling

1 cup marinara sauce (for dipping)

Skewers (metal or soaked wooden skewers)

Instructions
 

Preheat the Grill: Preheat your grill or grill pan over medium heat, lightly oiling the grates if using a grill pan.

    Prepare the Mixture: In a large bowl, combine the grated zucchini, ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, smoked paprika, salt, pepper, and the egg. Mix thoroughly until all ingredients are well combined.

      Form Meatballs: With your hands, form the meat mixture into small meatballs, about one inch in diameter. You should get approximately 16-20 meatballs depending on size.

        Assemble Skewers: Thread the meatballs onto the skewers, leaving a little space between each ball for even cooking. You can alternate with slices of bell pepper or cherry tomatoes for added flavor and color if desired.

          Grill the Skewers: Lightly spray the skewers with olive oil and place them on the grill. Cook for about 10-12 minutes, turning occasionally, until cooked through and golden brown. Internal temperature should reach at least 165°F (75°C).

            Serve with Marinara: Remove from the grill and let rest for a minute. Serve hot with marinara sauce on the side for dipping.
