Ingredients
  

2 medium zucchinis, spiralized into noodles

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 cup romaine lettuce, chopped

1/4 cup grated Parmesan cheese

1/4 cup cherry tomatoes, halved

1/4 cup Caesar dressing (store-bought or homemade)

2 tablespoons fresh parsley, chopped, for garnish

Optional: croutons for added crunch

Instructions
 

Prepare the Chicken:

    - Preheat your grill or a skillet over medium-high heat. Season the chicken breasts with olive oil, salt, and pepper.

      - Grill or sauté the chicken for about 6-7 minutes on each side or until thoroughly cooked and the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for 5 minutes, then slice it into strips.

        Spiralize the Zucchini:

          - Using a spiralizer, prepare the zucchinis into noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons, or buy pre-spiralized zucchini.

            Sauté the Zoodles (Optional):

              - If you prefer your zucchini noodles warm, briefly sauté them in a non-stick skillet over medium heat for 2-3 minutes. Season lightly with salt and pepper. If you like them raw, skip this step.

                Assemble the Salad:

                  - In a large bowl, combine the spiralized zucchini noodles, chopped romaine lettuce, sliced chicken, halved cherry tomatoes, and grated Parmesan cheese.

                    Dress the Salad:

                      - Drizzle Caesar dressing over the salad mixture and toss gently until everything is evenly coated. Adjust seasoning with more salt and pepper if needed.

                        Serve & Garnish:

                          - Plate the salad, and top with additional Parmesan cheese, chopped parsley, and croutons if desired. Enjoy immediately!
