2 large zucchini, sliced into 1/4 inch rounds

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

1/4 cup sliced pepperoni (or your choice of toppings)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

4 slices of sourdough bread (or bread of your choice)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your grill or skillet over medium heat. Sprinkle the zucchini rounds with salt and pepper, then grill them for about 2-3 minutes on each side until they are tender and have grill marks. Remove them from the heat.

    Cheese Mixture: In a medium bowl, combine the shredded mozzarella cheese with Italian seasoning and garlic powder. Mix well to ensure the seasonings are evenly distributed.

      Assemble the Sandwich: On a slice of sourdough bread, spread a generous layer of marinara sauce. Next, layer some grilled zucchini rounds, add a few slices of pepperoni, and then sprinkle the cheese mixture on top.

        Top It Off: Place another slice of sourdough bread on top to complete the sandwich. Repeat this process for the second sandwich.
