Zucchini Popcorn Chicken

Ingredients
  

2 medium zucchinis, cut into bite-sized pieces

1 pound boneless, skinless chicken breasts, cut into bite-sized chunks

1 cup buttermilk

2 cups panko breadcrumbs

½ cup all-purpose flour

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon dried thyme

Vegetable oil for frying

Fresh parsley, chopped (for garnish)

Optional: hot sauce, for serving

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the chicken pieces with buttermilk. Ensure all pieces are coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

      Prepare the Zucchini:

        - While the chicken marinates, cut the zucchinis into bite-sized pieces. If desired, sprinkle a little salt over them and let sit for 20 minutes to release moisture. Pat dry with paper towels before starting the breading process.

          Set Up the Breading Station:

            - In a shallow bowl, combine flour with garlic powder, onion powder, smoked paprika, salt, pepper, oregano, and thyme. Mix well.

              - In another shallow bowl, place the panko breadcrumbs.

                Bread the Chicken and Zucchini:

                  - Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour, then dip it back into the buttermilk, followed by coating it with panko breadcrumbs. Press down gently to help the breadcrumbs adhere.

                    - Repeat the same process for the zucchini pieces.

                      Fry the Popcorn Chicken:

                        - In a large skillet, heat about ½ inch of vegetable oil over medium-high heat until hot (about 350°F/175°C). Carefully add in the breaded chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes per side. Use a slotted spoon to transfer to a paper towel-lined plate.

                          - Repeat the process with the zucchini pieces. Fry until golden and crispy, about 3-4 minutes.

                            Serve:

                              - Arrange the fried chicken and zucchini on a serving platter. Garnish with chopped fresh parsley. Serve hot with optional hot sauce for added flavor.
