Zucchini Spinach Grilled Cheese Wraps

2 large zucchini, thinly sliced into long strips

2 cups fresh spinach, washed and roughly chopped

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

4 large whole wheat or spinach tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 teaspoon red pepper flakes (optional for heat)

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat a grill pan or an outdoor grill over medium heat. Toss the sliced zucchini with 1 tablespoon of olive oil, garlic powder, salt, pepper, and red pepper flakes if using. Grill the zucchini slices for about 3-4 minutes on each side, until they are tender and have grill marks. Remove from heat and set aside.

    Sauté the Spinach: In a medium skillet over medium heat, add the remaining tablespoon of olive oil. Add the chopped spinach and sauté for about 2-3 minutes until just wilted. Remove from heat and combine with the grilled zucchini.

      Assemble the Wraps: Lay out one tortilla flat on a clean surface. Sprinkle 1/4 cup of mozzarella cheese evenly over half of the tortilla. On top of the cheese, layer a generous portion of the zucchini and spinach mixture, followed by 1/4 cup of crumbled feta cheese. Fold the tortilla in half to cover the filling.

        Grill the Wraps: Wipe the grill pan with a little oil if necessary. Place the folded wrap onto the grill pan and cook for about 3-5 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining tortillas and filling.

          Serve: Once grilled, cut each wrap into halves or quarters. Garnish with fresh basil leaves if desired. Serve warm with a side of marinara sauce or your favorite dipping sauce.
