Zucchini Tomato Cheddar Frittata

1 large zucchini, grated

1 medium-sized tomato, diced

1 cup shredded sharp cheddar cheese

6 large eggs

1/4 cup whole milk

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the grated zucchini to the skillet and cook for about 5-6 minutes, stirring occasionally, until slightly softened and any moisture has evaporated. Season with salt and pepper to taste.

        In a mixing bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper. Stir in the diced tomato and half of the shredded cheddar cheese.

          Pour the egg mixture over the sautéed zucchini and onion in the skillet, ensuring it is evenly distributed. Gently stir to incorporate all ingredients.

            Sprinkle the remaining cheddar cheese evenly over the top of the frittata.

              Cook on the stovetop for about 3-4 minutes, allowing the bottom to set. Then transfer the skillet to the preheated oven.

                Bake for 15-20 minutes, or until the frittata is set in the middle and the top is lightly golden. You can check by inserting a toothpick into the center – it should come out clean.

                  Remove from the oven and let it cool for a few minutes. Slice into wedges and garnish with fresh basil leaves before serving.
