Ingredients

1 lb boneless, skinless chicken breasts, cut into strips

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crispiness)

1 cup grated Parmesan cheese

1 tsp Italian seasoning

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

½ cup marinara sauce (for dipping)

Fresh basil leaves (for garnish)

Olive oil spray or vegetable oil (for frying)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). If you're using a baking rack, place it on a baking sheet for even cooking.

Prepare the Breading Station: Set up three shallow dishes - one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.

Bread the Chicken: Take each chicken strip and coat it in flour, shaking off the excess. Next, dip it in the beaten eggs, allowing any excess to drip off before rolling it in the breadcrumb mixture, pressing gently to ensure it sticks.

Arrange on Baking Rack: Place the breaded chicken fingers on the prepared baking rack. Spray them lightly with olive oil spray to help them crisp up in the oven.

Bake: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy, flipping them halfway through for even cooking.

Warm the Marinara Sauce: While the chicken fingers are baking, warm the marinara sauce in a small saucepan over low heat until heated through. You can also add some fresh basil for extra flavor.

Serve: Once the chicken Parmesan fingers are done, remove them from the oven and let them cool for a couple of minutes. Serve hot with the warm marinara sauce for dipping and garnish with fresh basil leaves for a pop of freshness.
