Crunchy Thai Veggie Spring Rolls

Ingredients
  

1 cup shredded carrots

1 cup shredded purple cabbage

1 cup bean sprouts

1 small cucumber, julienned

1 red bell pepper, julienned

4 green onions, sliced

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint leaves, chopped

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon grated ginger

1 package rice paper wrappers (8-10)

Oil for frying (such as vegetable or peanut oil)

Instructions
 

Prepare the Veggies: In a large bowl, combine shredded carrots, purple cabbage, bean sprouts, cucumber, red bell pepper, green onions, cilantro, and mint.

    Season the Mixture: Add in the soy sauce, sesame oil, and grated ginger. Toss all the ingredients together until the veggies are evenly coated. Set aside.

      Soften the Wrappers: Fill a wide, shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds, or until it becomes pliable. Carefully transfer it to a clean, flat surface.

        Fill and Roll: Place a small amount of the veggie mixture (about 2 tablespoons) in the lower third of the wrapper. Fold the bottom of the wrapper over the filling, then fold in the sides and roll it tightly away from you to enclose the filling completely. Repeat this process with the remaining wrappers and filling.

          Fry the Rolls: Heat about 1 inch of oil in a deep frying pan over medium-high heat. Once hot, carefully add a few spring rolls at a time, frying until golden brown and crispy (about 3-4 minutes). Make sure not to overcrowd the pan.

            Drain and Serve: Using a slotted spoon, transfer the spring rolls to a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce, like sweet chili sauce or soy sauce.
