2 cans (15 oz each) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towel. Pat them dry to remove excess moisture, which helps them become crispy when roasted.

      Season the Chickpeas: In a large mixing bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika, sea salt, black pepper, and cayenne pepper (if using). Mix well.

        Coat the Chickpeas: Add the dried chickpeas to the bowl and toss them until they are evenly coated with the seasoning mixture.

          Arrange on a Baking Sheet: Spread the seasoned chickpeas out in a single layer on a parchment-lined baking sheet.

            Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Shake the baking sheet halfway through to ensure even cooking. Keep an eye on them to prevent burning.

              Cool and Crisp: Once they are golden brown and crispy, remove the chickpeas from the oven. Let them cool for about 5 minutes to enhance their crunchiness.
