1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons sugar

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup mixed fresh fruit (such as strawberries, blueberries, kiwi, and raspberries)

Optional: mint leaves for garnish

Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. The mixture should resemble wet sand.

    Form the Cups: Take small dessert cups or shot glasses and spoon about 1-2 tablespoons of the crust mixture into the bottom of each cup. Press down firmly with the back of a spoon to create an even layer.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese using an electric mixer until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

        Whip the Cream: In a separate large bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until fully incorporated and smooth. Be gentle to keep the mixture light and airy.
