Ingredients

1 ½ cups graham cracker crumbs

1 cup shredded unsweetened coconut

½ cup unsalted butter, melted

1/3 cup honey or maple syrup

Zest of 1 lemon

1 cup fresh lemon juice (about 4-5 lemons)

1 cup powdered sugar

1 tsp vanilla extract

A pinch of salt

Extra shredded coconut for garnish (optional)

Instructions

Prepare the Base: In a mixing bowl, combine the graham cracker crumbs and shredded coconut. Pour in the melted butter and honey (or maple syrup), and mix well until all the crumbs are evenly coated and resemble wet sand.

Form the Base: Press the mixture firmly into the bottom of a lined 8x8-inch baking dish to form an even layer. Use the back of a spatula or your fingers to make sure it’s tightly packed. Place it in the refrigerator to chill while you prepare the filling.

Make the Lemon Filling: In another bowl, whisk together the lemon juice, lemon zest, powdered sugar, vanilla extract, and a pinch of salt. Make sure there are no lumps, and the mixture is fully combined.

Combine: Pour the lemon mixture over the chilled graham cracker base, spreading it evenly with a spatula. Gently shake the dish to release any air bubbles.

Chill: Cover the dish with plastic wrap or a lid and refrigerate for at least 3-4 hours or until the filling has set.

Serve: Once set, cut the bars into squares and sprinkle extra shredded coconut on top for garnish if desired. Serve chilled or at room temperature.

Enjoy: These Coconut Lemon Squares are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to a week.
